Skyphos, Eros Escarole oh my. No I'm not speaking Latin, I'm speaking lettuce! Escarole is wider and more tender than endive with a mild and delicate flavor. And Skyphos is the most beautiful red head you're ever sure to meet... in the lettuce department. :) It really has an excellent flavor and texture. It is a member of the butterhead family.
